Ingredients:
- 9 large lightly beaten eggs
- 1 tablespoon butter for greasing the baking dish
- 2 cups shredded sharp Cheddar Cheese
- 2 cups shredded Monterey Jack cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1 cup chopped pickled jalapenos, drained
- 1 cup chopped pimentos, drained
Instructions:
- Preheat your oven to 325ºF (163ºC).
- In a large mixing bowl, shred the Cheddar and Monterey Jack cheeses, and set them aside.
- In another bowl, lightly beat the eggs, then stir in the garlic powder and salt. Set this mixture aside.
- Prepare a 13 x 9 baking dish by greasing it with butter.
- After draining, chop the pickled jalapenos and pimentos, making sure to strain them well.
- In the prepared baking dish, combine the cheeses, jalapenos, and pimentos.
- Evenly drizzle the egg mixture over the cheese and pepper blend.
- Bake uncovered in the preheated oven for 25-35 minutes, or until the center comes out clean when tested with a toothpick and the top feels slightly firm to the touch.
- Allow the dish to cool slightly before slicing it into bite-sized pieces. Serve and enjoy your cheesy, spicy bites!
