Ingredients

• 1 pound ground Italian sausage

• 16 ounces egg noodles, cooked al dente

• 2 medium green peppers, cleaned and diced

• 28 ounces canned diced tomatoes (with juice)

• 3 teaspoons garlic, freshly minced

• 1 teaspoon Italian seasoning

• 1/2 teaspoon red pepper flakes (optional, for heat)

• 2 tablespoons olive oil

• Salt and pepper, to taste

• Fresh basil or parsley, for garnish (optional)

Instructions

1. Cook the Noodles:

• Bring a large pot of salted water to a boil. Cook the egg noodles according to package instructions until al dente. Drain and set aside.

2. Brown the Sausage:

• In a large skillet, heat olive oil over medium heat. Add the ground Italian sausage and cook until browned and crumbled. Remove the sausage from the skillet and set aside.

3. Sauté the Vegetables:

• In the same skillet, add the diced green peppers and sauté for 3–4 minutes until slightly softened. Add the minced garlic and cook for another minute until fragrant.

4. Create the Sauce:

• Add the canned diced tomatoes (with juice) to the skillet. Stir in the Italian seasoning, red pepper flakes (if using), salt, and pepper. Let the sauce simmer for 5–7 minutes to blend the flavors.

5. Combine and Heat Through:

• Return the cooked sausage to the skillet and mix well with the sauce. Add the cooked egg noodles and toss until everything is evenly coated and heated through.

6. Serve and Garnish:

• Transfer to serving plates and garnish with fresh basil or parsley for a burst of color and flavor.

Pro Tips

• For added richness, sprinkle grated Parmesan cheese over the dish before serving.

• Want more veggies? Add sliced mushrooms, zucchini, or onions to the sauté.

• For a lighter version, use turkey sausage and whole-grain noodles.
