Garlic Butter Steak Bites and Potatoes

Ingredients:
1 lb sirloin steak, cut into 1-inch cubes
1 lb baby potatoes, halved
4 tablespoons butter, divided
4 cloves garlic, minced
1 teaspoon fresh thyme, chopped
Salt and pepper to taste
Fresh parsley, chopped for garnish


Directions:
-Boil potatoes in salted water until just tender, about 10 minutes. Drain.
-Heat 2 tablespoons of butter in a large skillet over medium-high heat. Add potatoes, season with salt and pepper, and fry until golden and crispy. Remove and set aside.
-In the same skillet, add the remaining butter and steak bites. Season with salt and pepper.

-Cook until steak bites are browned and cooked to your preference, about 3-4 minutes.
-Add garlic and thyme to the skillet, stirring with steak and potatoes for another minute until fragrant.
