Easy Baked Meatballs

INGREDIENTS :

• 1 lb. lean ground beef, 80% – 90%

• 2 eggs, beaten with 1/2 cup milk

• 1/2 cup grated Parmesan

• 1 cup panko or bread crumbs

• 1 small onion, minced

• 1/2 teaspoon oregano

• 1 teaspoon salt

• freshly ground pepper to taste

• 1/4 cup minced fresh basil

DIRECTIONS :

To make clean up easier….I line a cookie sheet with parchment paper. Mix all ingredients with hands. Form into golf ball sized meatballs. Bake at 350 degrees for 30 – 35 minutes.

These make incredible meatball subs…just add some spaghetti sauce over them on a sub roll…top with some shredded mozzarella cheese and toast them in the oven until the cheese is melted….YUM!
