Ingredients:
For the Sauce:
• 2 tbsp olive oil
• 1 large onion, finely chopped
• 3 cloves garlic, minced
• 10 oz mushrooms, sliced
• 10 oz fresh spinach leaves
• 2 cups ricotta cheese
For the Lasagna:
• 1 package (9 oz) no-boil lasagna noodles
• 3 cups shredded mozzarella cheese
• 1 cup grated Parmesan cheese
• 2 cups marinara sauce
• 1 cup heavy cream
• 1 tsp dried Italian seasoning (optional)
• Salt and pepper, to taste
Instructions:
1. Preheat Your Oven:
Set your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
2. Prepare the Sauce:
• Heat olive oil in a large skillet over medium heat.
• Add the chopped onion and sauté until soft and translucent, about 5 minutes.
• Stir in the minced garlic and cook for 1 minute until fragrant.
• Add the mushrooms and cook until softened and golden, about 7–8 minutes.
• Toss in the spinach and cook until wilted, about 2 minutes. Remove from heat and let cool slightly.
• Stir in the ricotta cheese, then season with salt and pepper to taste. Set aside.
3. Assemble the Lasagna:
• Spread a thin layer of marinara sauce on the bottom of the baking dish.
• Lay down a layer of lasagna noodles.
• Spread a generous amount of the spinach and mushroom ricotta mixture over the noodles.
• Sprinkle with mozzarella cheese and a little Parmesan.
• Repeat layers: marinara sauce, noodles, ricotta mixture, mozzarella, and Parmesan, until all ingredients are used, finishing with mozzarella on top.
4. Add the Creamy Touch:
• Pour the heavy cream evenly over the assembled lasagna. This will make it extra creamy and delicious.
• Sprinkle the top with dried Italian seasoning, if desired.
5. Bake:
• Cover the dish with foil and bake for 25 minutes.
• Remove the foil and bake for another 15–20 minutes, or until the top is golden and bubbling.
6. Cool and Serve:
Let the lasagna rest for 10 minutes before slicing. Serve warm and enjoy!
