Chocolate Fudge Cupcakes

Ingredients

For the Cupcakes:

• 1 cup all-purpose flour

Step 1: Prepare the Cupcakes

1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.

2. In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.

3. In a separate large bowl, whisk together the melted butter, granulated sugar, and brown sugar until well combined.

4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

5. Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk, mixing until just combined.

6. Stir in the hot water or coffee until the batter is smooth. The batter will be thin—this is normal!

7. Fill cupcake liners two-thirds full with batter.

8. Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean.

9. Let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Step 2: Make the Chocolate Ganache Frosting

1. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Do not boil.

2. Pour the hot cream over the chopped chocolate in a heatproof bowl. Let sit for 5 minutes.

3. Stir gently until the chocolate is completely melted and smooth. Stir in the vanilla extract.

4. Let the ganache cool for about 15–20 minutes, or until it thickens enough to pipe or spread.

Step 3: Assemble the Cupcakes

1. Pipe or spread the chocolate ganache frosting onto each cooled cupcake.

2. Sprinkle with chocolate shavings and white chocolate chips for extra texture and flavor.

3. Let the cupcakes sit for 10 minutes before serving to allow the ganache to set.
