Apple Butter Cookies

INGREDIENTS:

• 1/2 cup butter, softened

• 1 cup sugar

• 1/2 cup apple butter

• 1 egg

• 2 1/2 cups all-purpose flour

• 1 tsp baking soda

• 1 tsp ground cinnamon

• 1/4 tsp salt

• 1/2 cup chopped walnuts or raisins (optional)

DIRECTIONS:

Preheat the oven to 350°F (175°C).

In a large mixing bowl, cream together the butter, sugar, and apple butter until smooth.

Beat in the egg until combined.

In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.

Gradually add the dry ingredients to the wet mixture, mixing until just combined.

If desired, fold in walnuts or raisins.

Drop tablespoon-sized scoops of dough onto a greased baking sheet.

Bake for 10-12 minutes, or until the edges are golden brown.

Let cool on a wire rack before serving.
