Chocolate Cake Roll Recipe


Ingredients
For the Cake

¾ cup (95g) all-purpose flour
¼ cup (25g) cocoa powder (unsweetened)
1 tsp baking powder
¼ tsp salt
4 large eggs, separated
¾ cup (150g) granulated sugar (divided: ½ cup for yolks, ¼ cup for whites)
1 tsp vanilla extract
2 tbsp milk
For the Filling

1 cup (240ml) heavy cream, chilled
2 tbsp powdered sugar
1 tsp vanilla extract
For the Topping

½ cup (90g) semi-sweet chocolate, melted
2 tbsp heavy cream
Instructions
Prepare the Cake

Preheat your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.
In a bowl, sift together the flour, cocoa powder, baking powder, and salt. Set aside.
Whip Egg Whites

In a clean bowl, beat the egg whites with an electric mixer until soft peaks form. Gradually add ¼ cup sugar and continue beating until stiff peaks form. Set aside.
Mix Egg Yolks

In another bowl, beat the egg yolks with the remaining ½ cup sugar until thick and pale. Mix in the vanilla extract and milk.
Combine the Mixtures

Gradually fold the dry ingredients into the yolk mixture until just combined.
Gently fold in the whipped egg whites in three additions, taking care not to deflate the batter.
Bake the Cake

Pour the batter into the prepared pan and spread evenly. Bake for 10-12 minutes, or until the cake springs back when lightly touched.
Roll the Cake

While the cake is still warm, dust a clean kitchen towel with powdered sugar. Turn the cake out onto the towel, peel off the parchment paper, and roll the cake (with the towel) from the short end. Let it cool completely.
Prepare the Filling

In a bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
Assemble the Cake Roll

Unroll the cooled cake and spread the whipped cream filling evenly over the surface. Roll it back up tightly (without the towel) and place seam-side down on a serving plate.
Decorate

Mix the melted chocolate with heavy cream to create a glossy ganache. Drizzle or spread over the cake roll.
Chill and Serve

Refrigerate for at least 1 hour before slicing. Serve chilled and enjoy!
